wheat flour halwa/fudge


Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup sugar
  • 1/2 tsp cardamom (elaichi) powder
  • 1/4 cup ghee
  • few almond & cashew fried ghee

Method

  • In a glass bowl, combine the wheat flour and ghee and mix well.
  • Microwave on HIGH for 3 minutes. Mix well.
  • Add the sugar, cardamom powder and 3/4 cup of water and microwave on HIGH for 2 minutes until the sugar has dissolved. Mix well.
  • Serve hot garnished wih almonds and casew roasted in little ghee.

Almond halwa(Fudge)-Microwave


Almond halwa-Microwave

  Ingredients
Almonds-1cup
Sugar-1cup
Ghee-3-4tbsp
Milk-1/4cup
Elaichi powder-1/2tsp
Method:
Blanch almonds and remove skin
Grind the blanched almonds with milk into a coarse paste.

Add sugar mix well,put in amicrowave proof glass bowl.
Micro HIGH for 4 minutes,stirring once in between.

Take out add ghee and colour,mix well.

Microwave HIGH for another 5-8 mins until it forms into a thick solid ball.
 The time is approximate as it depends on the wattage and model of the oven.

How to blanch almonds


Blanching almonds help to remove the skins easily. 
Take required amount of almonds in a bowl.


Pour boiling water over it and let it sit for about a minute or two.
Alternately you can micro HIGH for 2 mins. 


Take care not to let it soak for a long time, since it will make the almonds soft and not crispy.
Drain and rinse lightly with cold water so that you can handle the almonds.
The skin will be loose when it is blanched well.
Rub in between your fingers and the almond will pop out.


Be careful and use a deep bowl otherwise you won't know where it flew.
You will have to search the whole place every time.
Or you peel a little bit of skin with your nail and it will slide smoothly.

Now proceed with any recipes you like with these blanched almonds.

You can slice when the almonds are still wet to make slivers easily and dry completely.Store in air tight container and use when needed in salads and other dishes.

MICROWAVE WHITE SAUCE


Making white sauce is simple in a microwave oven since you don't have to worry about scorching, sticking or overcooking. Occasional stirring prevents lumping.





 
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • salt and pepper to taste
Directions:
  • Put the butter in a microwave safe bowl
  • Melt on High for 15 to 30 seconds.
  • Stir in the flour until blended and micro High 30 seconds or till bubbly.
  • Stir in the milk, salt and pepper.
  • Microwave on high for about 2 minutes.
  • Stir and microwave on high for 1 to 2 minutes more or until thickened

CHOCOLATE FONDUE


CHOCOLATE FONDUE
Cooking Time : 5 mins. 30 secs.Serves 6.
Ingredients
100 grams plain or milk chocolate, broken into small pieces
1 tablespoon flour
1/2 cup milk
3 tablespoons cocoa (approx.)*
200 grams beaten cream
4 to 5 tablespoons sugar
1/2 teaspoon vanilla essence
1 tablespoon butter
2 tablespoons brandy (optional)
stewed or fresh fruit, marshmallows, cake pieces for dipping
Method
Put the butter in a glass bowl and add the flour. microwave on MEDIUM for 1 1/2 minutes, stirring twice in-between after every 30 seconds.
Add the milk, chocolate pieces, cocoa, cream, sugar and 1 teacup of water Microwave on medium for about 3 to 4 minutes or until mixture becomes thick, stirring in-between after every 30 seconds.
Put the mixture in a heatproof dish. Stir in the vanilla essence and brandy.
Serve by dipping fruit, marshmallow or cake pieces in the hot mixture.
